  • 2 cups cooked brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded lettuce (iceberg or romaine)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup dill pickles, sliced
  • 1/4 cup ketchup
  • 2 tbsp mustard

Instructions
