- 1 lb boneless, skinless chicken thighs
- 4 cloves fresh garlic, minced
- 2 tbsp fresh ginger, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 cup jasmine rice
- 2 cups chicken stock
Instructions
- Mince garlic and ginger; set aside.
- Heat oil in a skillet over medium-high heat. Sear chicken thighs skin-side down until golden brown (about 6 minutes). Flip and cook for another 4 minutes.
- Add minced garlic and ginger to the skillet; stir for about a minute. Pour in soy sauce and sprinkle brown sugar, watching it bubble.
- Add chicken stock until it covers the chicken halfway. Lower heat and simmer for about 20 minutes until the chicken is cooked through.
- Rinse jasmine rice under cold water until clear. In a separate pot, cook rice with an equal amount of chicken stock (1 cup rice to 1 cup stock) according to package instructions.
- Serve chicken over rice with extra broth, garnishing with chopped green onions if desired.
