- 3 large yellow onions (about 450g), thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 8 oz (225g) goat cheese, crumbled
- 2 large eggs
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and fit it into a tart pan.
- In a skillet, heat olive oil over medium heat. Add sliced onions and cook for about 20 minutes until soft and golden brown. Stir in balsamic vinegar during the last five minutes of cooking.
- In a bowl, whisk together eggs, thyme, salt, and pepper. Gently fold in half of the crumbled goat cheese.
- Spread caramelized onions evenly over the pastry. Pour egg mixture over top and sprinkle with remaining goat cheese.
- Bake for 25-30 minutes until golden brown and puffed up. Allow to cool slightly before slicing.
