- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup diced cucumbers
- 1 cup diced tomatoes
- ½ cup diced red onions
- ¼ cup tahini
- 2 tbsp freshly squeezed lemon juice
- Water (as needed for desired consistency)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the cauliflower into bite-sized florets and toss them in a large bowl with olive oil and shawarma spice blend until evenly coated. Spread on the prepared baking sheet.
- Roast the cauliflower for 25-30 minutes until golden brown, shaking halfway through for even cooking.
