- 1. Preheat the oven to 350°F (175°C). In a bowl, combine almond flour, melted coconut oil, and maple syrup until crumbly.
- 2. Press the mixture firmly into mini muffin tins evenly and bake for 10 minutes until golden brown. Allow to cool completely.
- 3. Blend drained soaked cashews, lemon juice, maple syrup, and a pinch of salt until smooth.
- 4. Gently fold in chopped cherries.
- 5. Spoon the filling into cooled crusts and smooth the tops. Chill for at least 2 hours before serving.
