  • 1/4 cup refined coconut oil
  • 1/4 cup maple syrup
  • 1 cup pitted cherries (fresh or frozen)
  • 1 cup soaked cashews (about 3 hours)
  • 2 tbsp lemon juice
  • Pinch of salt

Instructions

  1. 1. Preheat the oven to 350°F (175°C). In a bowl, combine almond flour, melted coconut oil, and maple syrup until crumbly.
  2. 2. Press the mixture firmly into mini muffin tins evenly and bake for 10 minutes until golden brown. Allow to cool completely.
  3. 3. Blend drained soaked cashews, lemon juice, maple syrup, and a pinch of salt until smooth.

  5. 5. Spoon the filling into cooled crusts and smooth the tops. Chill for at least 2 hours before serving.
