- 12 oz fettuccine pasta
- 1 lb boneless skinless chicken breasts, diced
- 4 cups fresh baby spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- In a skillet over medium heat, heat olive oil. Add seasoned chicken and sauté until golden brown (6-8 minutes). Remove from skillet.
- In the same skillet, add minced garlic and sauté for about one minute until fragrant. Pour in heavy cream and scrape up any browned bits from the pan.
- Stir in spinach until wilted (about 2 minutes). Return chicken to the skillet and mix in grated Parmesan cheese.
- Add drained fettuccine to the skillet along with reserved pasta water as needed for creaminess. Toss until well combined.
- Serve immediately, garnished with extra Parmesan or cracked pepper if desired.
