- 1 cup dry Marsala wine
- 8 oz fresh cremini or button mushrooms, sliced
- 2 shallots, minced
- 1 cup low-sodium chicken broth
- 4 tbsp unsalted butter (divided)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Pat chicken breasts dry and season both sides with salt and pepper.
- In a large skillet over medium-high heat, combine olive oil and half of the butter. Once hot, add chicken breasts and sear for 5-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté shallots and mushrooms until tender (3-4 minutes).
- Pour in the Marsala wine, scraping up brown bits from the pan. Add chicken broth and simmer for 5 minutes until slightly thickened.
- Return chicken to the skillet along with any juices. Simmer for another few minutes to meld flavors.
- Stir in remaining butter until melted and glossy. Serve warm over pasta or roasted vegetables.
