- 1/2 cup panko breadcrumbs

- 3 tbsp low-sodium soy sauce
- 1 tbsp fresh lime juice
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, coconut milk, panko breadcrumbs, cilantro, garlic, salt, and pepper until just mixed.
- Form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
