  • 1 lb ground chicken
  • 1/2 cup full-fat coconut milk
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fresh lime juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, coconut milk, panko breadcrumbs, cilantro, garlic, salt, and pepper until just mixed.
  3. Form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. While baking, whisk together honey, soy sauce, and lime juice in a bowl.
  6. Once baked, drizzle the sauce over the meatballs and serve warm.
