Ingredients
- 4 medium sweet potatoes
- 1 cup baby bella or cremini mushrooms, diced
- 2 cups fresh spinach, chopped
- 4 oz cream cheese
- 2 cloves garlic, minced
- 1/2 cup Parmesan cheese, grated
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly.
- Place sweet potatoes on a lined baking sheet. Poke holes with a fork and roast for about 45 minutes until soft.
- In a skillet over medium heat, add olive oil and sauté garlic for 1 minute. Add mushrooms and cook until tender (about 5 minutes). Stir in spinach until wilted.
- Allow sweet potatoes to cool slightly before slicing them open lengthwise. In a bowl, combine sautéed vegetables with cream cheese and half of the Parmesan until creamy.
- Fill each sweet potato half with the mixture and top with remaining Parmesan. Bake for another 10 minutes until bubbly and golden brown.
