- 3–4 lb chuck roast
- 4 dried guajillo peppers, stems and seeds removed
- 1 medium onion, chopped (divided)
- 4 garlic cloves
- 2 tsp ground cumin
- 2 tsp dried oregano
- 4 cups low-sodium beef broth
- Juice of 2 limes
- Corn tortillas
- Chopped cilantro and diced onions
Instructions
- Soak the guajillo peppers in hot water for about 20 minutes until softened.
- Blend soaked peppers with half the chopped onion, garlic, cumin, oregano, and 1 cup of beef broth until smooth.
- Sear the chuck roast in a skillet over medium-high heat until browned on all sides.
- Place seared roast in the crockpot; pour pepper sauce over it along with remaining beef broth and lime juice.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once cooked, shred the beef using two forks directly in the crockpot. Serve with warm tortillas topped with cilantro and onions.
