- 6 hard-boiled eggs
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1/4 cup pickle relish
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper (to taste)

Instructions
- Boil the eggs by placing them in a pot covered with water and bringing it to a boil over medium heat. Once boiling, cover and let sit for 12 minutes.
- Transfer the eggs to an ice bath for five minutes to cool.
- Peel the cooled eggs and chop them into small pieces.
- In a mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, pickle relish, salt, pepper, and half of the paprika. Mix until well combined.
- Cover and refrigerate for at least one hour to allow flavors to meld.
- Serve in a bowl garnished with remaining paprika alongside chips or fresh veggies.
