Description

  • 6 hard-boiled eggs
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1/4 cup pickle relish
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1/2 tsp paprika (for garnish)

Instructions

  1. Boil the eggs by placing them in a pot covered with water and bringing it to a boil over medium heat. Once boiling, cover and let sit for 12 minutes.
  2. Transfer the eggs to an ice bath for five minutes to cool.
  3. Peel the cooled eggs and chop them into small pieces.
  4. In a mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, pickle relish, salt, pepper, and half of the paprika. Mix until well combined.
  5. Cover and refrigerate for at least one hour to allow flavors to meld.
  6. Serve in a bowl garnished with remaining paprika alongside chips or fresh veggies.
