Description

Ingredients

  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, sauté the spinach until wilted (about 3 minutes). Add minced garlic in the last minute.
  3. In a bowl, mix sautéed spinach, ricotta cheese, half of the Parmesan, beaten egg, salt, and pepper until well combined.
  4. Stuff the mixture into cooked pasta shells or bell peppers and arrange them in the baking dish.
  5. Sprinkle remaining Parmesan on top and cover with foil.
  6. Bake for 25-30 minutes until golden brown, removing foil for the last 5 minutes.
