- 10 fresh corn tortillas
- 2 cups Oaxaca cheese, shredded
- 1 cup Chihuahua cheese, shredded
- 2 cups red chile sauce (homemade or canned)
- 1 medium onion, finely chopped
- 1/4 cup vegetable oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, heat the vegetable oil. Lightly fry each corn tortilla for about 10-15 seconds on each side until pliable.
- Spread a spoonful of red chile sauce on each tortilla. Add Oaxaca and Chihuahua cheese along with chopped onions, then roll the tortillas tightly.
- Place rolled enchiladas seam-side down in a greased baking dish. Pour remaining red chile sauce over them.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake uncovered for an additional 10 minutes until bubbly.
