- 1 cup all-purpose flour
- 2 large eggs
- 2 cups panko breadcrumbs
- 4 oz curry roux (about half a box)
- 1 large onion, sliced thinly
- 1 medium carrot, diced
- 1 medium potato, diced
- 2 cups water
- Cooking oil for frying
Instructions
- Prepare your ingredients by slicing the pork and chopping vegetables.
- Season both sides of the pork cutlets with salt and pepper.
- Set up a breading station: place flour on one plate, beaten eggs in a bowl, and panko breadcrumbs on another plate.
