  • 1 lb baby potatoes
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • Fresh herbs (rosemary or thyme)

Instructions

  1. Wash and cut baby potatoes in half or quarters. Season the sirloin steak with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; add potatoes cut-side down and cook until golden brown (10-12 minutes).
  3. Push potatoes aside; add more olive oil if needed, then sear the steak for 4-5 minutes on each side until desired doneness.
  4. Reduce heat; add garlic and butter to melt over the steak and potatoes for an additional minute.
  5. Sauté everything together briefly until flavors meld; garnish with fresh herbs before serving.

Notes

For added flavor, marinate the steak in olive oil, garlic, salt, and pepper for a few hours prior to cooking.

Substitute baby potatoes with Yukon Gold or red potatoes for variety.
