- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides, about 5-6 minutes per side. Remove from skillet and let rest.
- Cook pasta according to package instructions until al dente. Reserve 1 cup of starchy pasta water before draining.
- In the same skillet, reduce heat, add minced garlic, and sauté for about 1 minute. Pour in heavy cream and stir to combine.
- Add chicken broth and Italian seasoning; let simmer until sauce thickens slightly. Stir in Parmesan cheese until melted.
- Slice the cooked chicken and add it along with the drained pasta to the sauce. If too thick, gradually add reserved pasta water until desired consistency is reached.
- Serve immediately with extra Parmesan sprinkled on top.
