Ingredients

Scale
  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 cups all-purpose flour
  • 1 cup unsalted butter (cold)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a baking dish with parchment paper.
  2. In a mixing bowl, combine flour and sugar. Cut in cold butter until mixture resembles coarse crumbs. Add one egg and mix until dough forms.
  3. Divide the dough in half; roll out one half to fit the bottom of your baking dish and press it firmly into place.
  4. In another bowl, mix blueberries, sugar, lemon juice, and cornstarch. Pour this mixture evenly over the prepared crust.
  5. Roll out the second half of the dough and cut it into strips for the lattice topping. Arrange them crisscross over the blueberry filling.
  6. Bake for 45-50 minutes until golden brown on top and bubbly around the edges. Allow cooling before slicing.
