Description

Greek Chicken Kabobs are a vibrant and flavorful dish that captures the essence of Mediterranean cuisine. Marinated in a zesty blend of lemon, garlic, and oregano, these tender chicken pieces are paired with colorful bell peppers and onions, all grilled to perfection. Each bite offers an explosion of taste that will elevate your next gathering. Serve them with creamy tzatziki sauce for an unforgettable culinary experience.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts (about 34 breasts)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 1 cup bell peppers (any color), chopped into chunks
  • 1 medium red onion, chopped into chunks
  • 1 cup tzatziki sauce for dipping

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Marinate the Chicken: Cut chicken breasts into one-inch cubes and place them in a resealable bag or bowl. Pour marinade over chicken, seal or cover, and refrigerate for at least one hour (two hours is ideal).
  3. Chop Veggies: While marinating, chop bell peppers and red onion into chunks similar in size to the chicken.
  4. Assemble Skewers: Thread marinated chicken cubes onto skewers alternately with bell peppers and onion chunks without packing tightly.
  5. Grill: Preheat grill over medium-high heat (375°F/190°C). Cook kabobs on the grill for about 10-15 minutes total, turning occasionally until chicken is fully cooked.
  6. Serve: Transfer kabobs to plates and serve with tzatziki sauce on the side for dipping.
