  • 3 medium yellow onions, diced
  • 4 large carrots, sliced thick
  • 4 medium russet potatoes, cubed
  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  4. Return the browned beef to the pot along with carrots and potatoes. Pour in beef broth until submerged and add thyme and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for about 2 hours until meat is fork-tender.
