Ingredients
- 1 cup mixed seafood (shrimp, calamari, scallops)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, sliced
- 1/2 medium red onion, finely sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- Juice of 1 lemon
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Clean the mixed seafood under cold running water. If using frozen seafood, thaw completely. Boil salted water; cook shrimp for 3-4 minutes until pink, then add calamari for an additional minute. Drain and let cool.
- While cooling, chop the cherry tomatoes in halves and slice the cucumber and red onion.
- In a large bowl, combine cooled seafood with chopped vegetables. Toss gently.
- Drizzle with lemon juice and olive oil; sprinkle with parsley and basil before tossing again.
- Season with salt and pepper to taste. Chill for at least 30 minutes before serving.
