  • 4 cups water or broth
  • For garnish: 2 green onions, thinly sliced

Instructions

  1. Prepare your ingredients by chopping the chicken thighs, onions, carrots, and potatoes.
  2. Heat oil in a large pot over medium heat; sauté the onions until translucent (about 5 minutes).
  3. Add the chicken pieces to the pot; cook until browned on all sides (5-7 minutes).
  4. Stir in the carrots and potatoes; pour enough water or broth to cover by an inch. Bring to a gentle boil.
