  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1/2 cup Korean BBQ sauce (store-bought or homemade)
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup zucchini, sliced
  • 1 cup carrots, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground beef, panko breadcrumbs, minced garlic, green onions, salt, pepper, and half the BBQ sauce until well combined. Form into meatballs about 1 inch in diameter.
  3. Arrange meatballs on the prepared baking sheet.
  4. Toss bell peppers, zucchini, and carrots in olive oil along with salt and pepper. Spread them on another baking sheet.
  5. Bake both sheets for about 20-25 minutes until the meatballs are cooked through and vegetables are tender-crisp.
  6. Drizzle remaining BBQ sauce over meatballs and veggies during the last five minutes of cooking. Serve hot.
