- 1/2 cup panko breadcrumbs
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1/2 cup Korean BBQ sauce (store-bought or homemade)
- 1 cup bell peppers, sliced (mixed colors)
- 1 cup zucchini, sliced
- 1 cup carrots, thinly sliced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix ground beef, panko breadcrumbs, minced garlic, green onions, salt, pepper, and half the BBQ sauce until well combined. Form into meatballs about 1 inch in diameter.
- Arrange meatballs on the prepared baking sheet.
- Toss bell peppers, zucchini, and carrots in olive oil along with salt and pepper. Spread them on another baking sheet.
- Bake both sheets for about 20-25 minutes until the meatballs are cooked through and vegetables are tender-crisp.
- Drizzle remaining BBQ sauce over meatballs and veggies during the last five minutes of cooking. Serve hot.
