  • 2 cloves garlic, minced
  • 1 ripe mango, diced
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tsp curry powder
  • 1 tbsp fresh ginger, grated
  • 2 tbsp lime juice
  • 2 tbsp vegetable oil
  • 1 cup low-sodium chicken broth

Instructions

  1. Dice chicken breasts into bite-sized pieces and set aside. Mince garlic and grate ginger.
