Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add eggs and maple syrup (or honey) to the mashed bananas and whisk together until combined.
  4. In another bowl, mix oat flour, baking soda, salt, and cinnamon. Fold the dry mixture into the wet mixture until just combined—do not overmix.
