Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add eggs and maple syrup (or honey) to the mashed bananas and whisk together until combined.
- In another bowl, mix oat flour, baking soda, salt, and cinnamon. Fold the dry mixture into the wet mixture until just combined—do not overmix.
