- 2 fresh oranges (zest and juice)
- 2 tbsp olive oil
- 6 garlic cloves (minced)
- 2 tsp ground cumin
- 1 tbsp honey
- Salt and pepper to taste
- Fresh herbs (thyme or rosemary) for garnish
Instructions
- Preheat oven to 425°F (220°C). Rinse chicken under cold water and pat dry.
- In a bowl, mix zest and juice of oranges with olive oil, minced garlic, cumin, honey, salt, and pepper until well combined.
- Rub marinade all over the chicken thoroughly. Place in a zip-top bag or baking dish covered with plastic wrap. Marinate in the refrigerator for at least 1 hour or overnight for best results.
- Remove chicken from fridge about 30 minutes before roasting to reach room temperature. Place on a roasting rack in a baking pan.
- Roast for about 1 hour or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Baste halfway through cooking to keep it moist.
- Let rest for 10 minutes before carving. Serve with pan juices drizzled over slices.
