- 1 cup sushi rice
- 4 nori sheets
- 1 ripe avocado, sliced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons Sriracha
- 2 tablespoons mayonnaise (preferably Kewpie)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse sushi rice under cold water until clear; cook with 2 cups of water according to package instructions and let cool slightly.
- Mix cooled rice with 3 tablespoons of rice vinegar and 1 tablespoon of sugar until evenly coated.
- Lay a nori sheet shiny side down, spread sushi rice over two-thirds, and top with salmon slices and avocado.
- Roll tightly away from you; seal the edge with water.
- Slice rolls into bite-sized pieces, place on a baking sheet lined with parchment paper, drizzle with sesame oil, and bake for 12-15 minutes until golden.
