- 2 cups cremini or button mushrooms, chopped

- 2 cups low-sodium vegetable broth

- 2 celery stalks, finely chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh parsley, chopped

Instructions
- Preheat oven to 350°F (175°C) and lightly spray a large baking dish with nonstick cooking spray.
- In a large skillet over medium heat, cook bacon until crispy (6-8 minutes). Remove bacon and reserve drippings.
- Sauté onions and celery in the drippings until softened (about 5 minutes). Add mushrooms; cook until tender (5-7 minutes).
- In a bowl, combine sautéed vegetables with sourdough cubes, crumbled bacon, Parmesan cheese, herbs, salt, and pepper.
- Gradually stir in vegetable broth until evenly coated. Transfer mixture to the baking dish.
- Cover with foil and bake for 30 minutes; then uncover and bake for an additional 15-20 minutes until golden brown.
