  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 3/4 cup warm milk (110°F)
  • 2 tbsp butter, softened
  • 1 tsp ube extract
  • 2 large eggs
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/4 cup ube jam

Instructions

  1. Activate the yeast by combining warm milk, active dry yeast, and a teaspoon of sugar in a small bowl. Allow it to froth for about 5 minutes.
  2. In a large bowl, whisk together flour, sugar, butter, eggs, and ube extract. Stir in the yeast mixture until combined.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a cloth, and let rise for about an hour until doubled in size.
  5. Punch down the risen dough and roll it out to half an inch thick. Cut out circles using a donut cutter.
  6. Heat oil in a deep pan to 350°F (175°C). Fry each donut for about 2 minutes per side until golden brown. Drain on paper towels.
  7. Whip heavy cream with powdered sugar until soft peaks form; fold in ube jam for the filling.
  8. Use a piping bag to fill each donut with cream until plump.
