- 2 ½ cups (315g) all-purpose flour
- ½ cup (113g) unsalted butter, softened
- 1 cup (125g) fresh raspberries
- ½ cup (100g) granulated sugar
- 2 large eggs
- For the glaze: 1 cup (120g) powdered sugar
- 2 tablespoons milk or cream
Instructions
- In a large bowl, mix sourdough starter, flour, sugar, butter, and eggs until combined. Knead until smooth.
- Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours until doubled in size.
- Roll out the risen dough on a floured surface to a rectangle about ½ inch thick.
- Spread raspberries mixed with sugar along one edge and roll tightly.
- Cut into 1-inch thick pieces and arrange on parchment-lined sheets to rise for another hour.
- Heat oil in a deep pot to 350°F (175°C). Fry donuts until golden brown on both sides.
