- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 1 cup fresh raspberries, pureed
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the base of the prepared dish.
- Beat cream cheese and sugar until smooth. Add eggs one at a time and stir in vanilla extract until well blended.
- Melt white chocolate chips in intervals until smooth; mix into the cream cheese batter.
- Fold half of the raspberry puree into the mixture and pour over the crust.
- Dollop remaining raspberry puree on top and swirl gently with a knife.
- Bake for 30-35 minutes until set but slightly jiggly in the center. Cool completely before slicing.
