  • 2 pounds butternut squash (peeled and sliced into 1/4-inch rounds)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 6 fresh sage leaves (chopped)
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a saucepan over medium heat, warm heavy cream with minced garlic and chopped sage until fragrant.
  3. Layer butternut squash slices in the baking dish, pouring some cream mixture over each layer, and sprinkling Parmesan cheese in between.
  4. Finish with a pinch of nutmeg and the remaining cheese on top.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
