Description

Salmon Sushi Bake is a delicious and unique twist on traditional sushi, transforming fresh flavors into a comforting, shareable casserole. This easy-to-make dish features layers of creamy salmon, seasoned short-grain sushi rice, and a crispy panko topping. Ingredients

  • 2 cups cooked short-grain sushi rice
  • 12 oz fresh salmon fillets
  • 1/2 cup Japanese mayonnaise
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup chopped green onions
  • 1 cup panko breadcrumbs
  • 2 tbsp toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt until well mixed.
  3. Flake the salmon into bite-sized pieces in another bowl. Add mayonnaise, soy sauce, green onions, and salt; mix gently.
  4. Layer half of the sushi rice in the prepared baking dish, followed by the salmon mixture, then top with the remaining rice.
  5. Mix panko breadcrumbs with sesame seeds and sprinkle over the top.
  6. Bake for 25–30 minutes until golden brown and heated through.
