- 4 medium zucchinis (6–8 inches long)
- 1 lb ground sausage (Italian or turkey)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Halve each zucchini lengthwise and scoop out the seeds, leaving a quarter-inch border.
- In a large skillet over medium heat, cook the ground sausage with chopped onion and minced garlic until browned.
- Stir in Italian seasoning, salt, and pepper; remove from heat and let cool slightly before mixing in half of the shredded cheese.
- Fill each hollowed zucchini half evenly with the sausage mixture and top with remaining cheese.
- Place stuffed zucchinis in the baking dish, cover loosely with foil, and bake for about 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
