Ingredients

  • 4 large eggs
  • 1 pound ground sausage meat
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Boil the eggs by placing them in cold water, bringing it to a boil, then simmering for 6 minutes. Transfer eggs to an ice bath.
  2. Once cooled, peel the eggs and set aside. In a bowl, season the ground sausage with salt and pepper.
  3. Flatten a handful of sausage mixture in your palm and wrap it around each egg ensuring full coverage.
  4. Roll each wrapped egg in flour, dip into beaten egg, then coat with panko breadcrumbs.
  5. Heat oil in a deep pan over medium heat and fry the Scotch Eggs until golden brown (about 5 minutes). Drain on paper towels before serving.
