  • 8 oz lo mein noodles
  • 1 lb large raw shrimp, peeled and deveined
  • 1 cup bell peppers, sliced (any color)
  • 1 cup carrots, thinly sliced
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp oyster sauce

Instructions

  1. Prepare all ingredients by slicing vegetables and peeling shrimp.
  2. Boil water in a pot. Cook lo mein noodles according to package instructions until al dente. Drain and toss with a little oil.
  3. In a large skillet or wok, heat oil over medium-high heat. Sauté garlic, bell peppers, and carrots for about 3 minutes until vibrant.
  4. Push vegetables to the side and add shrimp; cook until pink (about 2 minutes). Mix everything together.
  5. Add noodles and sauces; toss until well combined.
  6. Serve hot, garnished with green onions.
