  • 4 boneless, skinless chicken breasts
  • 1 cup full-fat coconut milk
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tsp cayenne pepper (adjust to taste)
  • 2 tsp ground cumin
  • Juice of 2 limes

Instructions

  1. Trim excess fat from the chicken breasts and pat dry.
  2. In a bowl, combine coconut milk, garlic, ginger, cayenne pepper, cumin, and lime juice. Add chicken and marinate for at least 30 minutes (overnight is best).
  3. Heat oil in a skillet over medium heat. Remove chicken from marinade and cook until golden brown (5-7 minutes per side).
  4. Pour reserved marinade into the skillet and simmer for 10 minutes.
  5. For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and add to the skillet until thickened.
  6. Serve over rice or quinoa with extra sauce.
