- 1 cup full-fat coconut milk
- 4 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 2 tsp cayenne pepper (adjust to taste)
- 2 tsp ground cumin
- Juice of 2 limes
Instructions
- Trim excess fat from the chicken breasts and pat dry.
- In a bowl, combine coconut milk, garlic, ginger, cayenne pepper, cumin, and lime juice. Add chicken and marinate for at least 30 minutes (overnight is best).
- Heat oil in a skillet over medium heat. Remove chicken from marinade and cook until golden brown (5-7 minutes per side).
- Pour reserved marinade into the skillet and simmer for 10 minutes.
- For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and add to the skillet until thickened.
- Serve over rice or quinoa with extra sauce.
