- 3 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh spinach, chopped
- 1 cup green salsa
- 8 oz cream cheese, softened
- 2 cups shredded Monterey Jack and cheddar cheese blend
- ½ cup fresh cilantro, chopped
- 8 corn tortillas
Instructions
- Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
- Cook chicken in a skillet over medium heat for 6-8 minutes per side until no longer pink. Shred the chicken while warm.
- In a bowl, mix shredded chicken, spinach, cream cheese, half of the green salsa, and cilantro until well combined.
- Spoon about 2 tablespoons of the filling into each tortilla, roll tightly, and place seam-side down in the prepared baking dish.
- Drizzle remaining salsa over the enchiladas and sprinkle with shredded cheese.
- Bake for 20 minutes or until bubbly and golden brown.
