  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tsp green gel food coloring
  • 1 tsp vanilla extract
  • 16 oz cream cheese, softened
  • 1 cup sour cream, room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round baking pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until combined.
  3. In another bowl, mix together vegetable oil, buttermilk, eggs, green food coloring, and vanilla extract until smooth.
  4. Gradually add wet ingredients to dry ingredients and mix gently until just combined.
  5. Divide the batter evenly between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. While the cakes cool, beat cream cheese in a mixing bowl until smooth. Add sour cream, powdered sugar, and vanilla extract; mix until creamy.
  7. Once cakes are completely cool, layer them with cheesecake filling in between.
