  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, oil, and eggs until smooth.
  4. Combine wet ingredients with dry ingredients; it’s okay if the batter is slightly lumpy.
  5. Gently fold in the chopped strawberries.
  6. Spoon the batter into muffin cups until about three-quarters full.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before transferring to a wire rack.
