- 2 cups fresh strawberries, chopped
- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 cup all-purpose flour
- ½ cup unsalted butter, cold and cubed
- 2 large eggs
- 1 tsp baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix chopped strawberries and rhubarb with ½ cup sugar; set aside.
- In another bowl, combine flour, remaining sugar, baking powder, and salt. Cut in cold butter until crumbly. Add one egg and mix until combined.
- Press half the crust mixture into the bottom of the prepared dish. Spread fruit mixture evenly on top and crumble remaining crust over it.
- Bake for 35-40 minutes or until golden brown. Let cool completely before cutting into squares.
