Description

  • 2 cups fresh strawberries, chopped
  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix chopped strawberries and rhubarb with ½ cup sugar; set aside.
  3. In another bowl, combine flour, remaining sugar, baking powder, and salt. Cut in cold butter until crumbly. Add one egg and mix until combined.
  4. Press half the crust mixture into the bottom of the prepared dish. Spread fruit mixture evenly on top and crumble remaining crust over it.
  5. Bake for 35-40 minutes or until golden brown. Let cool completely before cutting into squares.
