Description

Strawberry Rhubarb Bars are a delightful summer treat that perfectly balances the sweetness of ripe strawberries with the tangy zing of fresh rhubarb. With a buttery crust and a crumbly topping, these bars are not only visually appealing but also irresistibly delicious. Ideal for picnics, potlucks, or cozy family gatherings, they offer a taste of nostalgia in every bite.

Ingredients

Scale
  • 2 cups fresh strawberries, sliced
  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line with parchment paper.
  2. In a bowl, mix sliced strawberries and rhubarb with granulated sugar; let sit to release juices.
  3. In another bowl, combine flour and softened butter until crumbly. Mix in sugar and egg until dough forms. Press into the baking dish.
  4. Spread the strawberry-rhubarb mixture evenly over the crust.
  5. For the topping, combine brown sugar with remaining flour and butter in the same bowl until crumbly; sprinkle over filling.
  6. Bake for 35-40 minutes or until golden brown and bubbly. Let cool before slicing.
