- 2 acorn squashes
- 1 cup fresh cremini mushrooms, diced

- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick spray.
- Slice each acorn squash in half and scoop out the seeds. Drizzle with olive oil and sprinkle with salt.
- In a skillet over medium heat, add olive oil. Sauté onion until translucent, then add garlic and mushrooms; cook until tender.
- Stir in cranberries until fragrant. Combine the mushroom mixture with breadcrumbs or cooked quinoa in a bowl. Add enough vegetable broth to moisten.
- Generously stuff each acorn squash half with the filling.
