- 1 cup cooked white or brown rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, add olive oil, onions, and garlic; sauté until soft (about 5 minutes).
- Add ground beef; cook until browned and drain excess fat.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; simmer for about 5 minutes.
- Stuff each bell pepper generously with the beef mixture.
- Place stuffed peppers upright in a baking dish with water at the bottom; cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10 minutes until cheese is bubbly.
