  • 2 medium sweet potatoes (about 500g)
  • 1/3 cup tahini (80g)
  • 2 cloves garlic, minced
  • 3 tbsp lemon juice (45ml)
  • 2 tbsp extra virgin olive oil (30ml)
  • 1 tsp ground cumin (2g)
  • 1/2 tsp salt (3g)

Instructions

  1. 1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes; arrange on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt. Roast for 25-30 minutes until tender.
  2. 2. Allow roasted sweet potatoes to cool slightly. In a food processor, combine sweet potatoes, tahini, garlic, lemon juice, cumin, and salt. Blend until smooth.
  3. 3. Adjust consistency by adding water one tablespoon at a time if too thick.
  4. 4. Taste and adjust seasoning as needed.
  5. 5. Transfer to a serving bowl, drizzle with olive oil, and garnish as desired before serving.
