  • 1 lb boneless skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp lime juice
  • 1 tbsp vegetable oil
  • Optional: Crushed peanuts and chopped cilantro for garnish

Instructions

  1. Trim excess fat from chicken breasts, rinse under cold water, and pat dry.
  2. In a bowl, mix soy sauce, garlic, and brown sugar. Add chicken and marinate for at least 30 minutes in the refrigerator.
  3. Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-7 minutes on each side until golden brown and cooked through (165°F).
  4. In a bowl, combine peanut butter, lime juice, and leftover marinade until smooth. Add water if needed to reach desired consistency.
  5. Pour the peanut sauce over cooked chicken in the skillet and stir to coat thoroughly.
  6. Plate the Thai peanut chicken and garnish with crushed peanuts and cilantro.
