- 1 cup powdered sugar
- 4 oz cream cheese (softened)

Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, oats, baking soda, and salt.
- In another bowl, beat softened butter with brown and granulated sugars until fluffy. Mix in egg and vanilla until smooth.
- Gradually add dry ingredients to the wet mixture; stir until just combined.
- Drop tablespoon-sized scoops of dough onto prepared sheets, spacing them apart.
- Bake for 10-12 minutes until edges are golden but centers remain soft. Let cool on sheets.
- Meanwhile, prepare the filling by mixing cream cheese, powdered sugar, and vanilla until smooth.
- Once cookies are cool, spread filling on half of them and sandwich with remaining cookies.
