  • 4 cups sturdy tortilla chips
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 can (19 oz) enchilada sauce
  • 2 cups cooked shredded chicken or black beans
  • 1 cup sour cream (for topping)
  • ¼ cup chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Layer half of the tortilla chips across the bottom of the baking dish.
  3. Sprinkle half of the chicken or beans over the chips, then pour half of the enchilada sauce and top with half of the cheese. Repeat layers.
  4. Cover with aluminum foil and bake for 20 minutes.
  5. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly.
  6. Let cool slightly before serving topped with sour cream and cilantro.
