- 1 cup Arborio rice
- 2 cups mixed fresh mushrooms (cremini and shiitake), chopped
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth, warmed
- ½ cup dry white wine
- ½ cup freshly grated Parmesan cheese
- 2 tbsp unsalted butter
- Fresh parsley or thyme, for garnish
Instructions
- Prepare all ingredients by chopping the mushrooms, onion, and garlic.
- In a skillet over medium heat, melt 1 tbsp of butter. Add onions and sauté until translucent (about 3 minutes). Stir in garlic and mushrooms; cook for an additional 5 minutes until softened.
- Add Arborio rice to the skillet and toast for about 2 minutes until edges are translucent.
- Pour in white wine; stir continuously until absorbed.
- Gradually add warm vegetable broth one ladle at a time, stirring gently until mostly absorbed before adding more (about 20 minutes total).
- Once cooked, remove from heat; stir in remaining butter and Parmesan cheese. Season with salt and pepper to taste. Garnish with herbs before serving.
