Instructions

  3. Cool slightly before adding eggs one at a time, mixing until smooth.
  4. Pipe long strips onto baking sheets, leaving space between each.
  5. Bake for 20-25 minutes until golden brown; let cool.
  6. Whip cream with cornstarch, sugar, and vanilla until soft peaks form.
  7. Poke holes in cooled eclairs and fill with the cream; dust with powdered sugar before serving.
