Description

Loaded Fiesta Potato Bowls are a deliciously comforting meal that combines crispy, golden potatoes with savory toppings for a fiesta of flavors. Ingredients

  • 4 medium Russet potatoes (about 2 lbs)
  • 2 tbsp extra virgin olive oil
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, quartered
  • 1 avocado, sliced
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 425°F (220°C). Wash and scrub the Russet potatoes.
  2. Cut the potatoes into wedges or cubes. Toss in a mixing bowl with olive oil, salt, pepper, and desired spices.
  3. Spread potato pieces on a lined baking sheet and roast for 30-35 minutes until golden brown and crispy.
  4. Once roasted, sprinkle cheddar cheese over hot potatoes and return to the oven for an additional 5-7 minutes until melted.
  5. In serving bowls, layer the cheesy potatoes with black beans, cherry tomatoes, avocado slices, sour cream or Greek yogurt, and green onions.
